With grapes grown in the southern, cooler regions of New South Wales, this cabernet varietal has great natural acidity, with abundant firm tannins, making it a perfect match for roast beef and crisped potatoes with a cabernet beef jus or Coq au Vin rouge. The nose is vibrant with loads of blackcurrant, liquorice and chocolate fruit notes with subtle varietal mint nuances. Additional balanced levels of spicy, chocolate oak give these aromas complexity and lift, while the palate is fruit driven, with dominant flavours of cassis, blackcurrant, redcurrant and plum, coupled with more varietal undertones of mint, liquorice and dark chocolate. The wine shows ample structure from supple fruit tannins and nutmeg oak, finishing with lingering, savoury tannins.
